Viking Professional Cutlery features X50CrMOV15 German Stainless Steel with a HRC of 55°-56° and is designed for both home and professional use. Knowing the demands of a professional Chef, the ergonomically designed handles were designed with a focus on comfort and ease of use featuring exceptional balance between the blade and handle. With little to no weight on the upward lift, this cutlery is designed to be an extension of the hand and eliminate fatigue. The blade features a 15° cutting edge that is hardened under inert gas to insure strength and long life. Viking cutlery is completely hygienic with no gaps between the tang and POM handle. The bolster and integrated tang deliver stability and balance while protecting the users hand from the heel of the blade.
